Ingredients:

  • 900g Brussels sprouts (trimmed and halved)
  • 30ml (2 tbsp) olive oil
  • 5g (1 tsp) salt
  • 2g (½ tsp) Laila black pepper
  • 60ml (4 tbsp) honey
  • 30ml (2 tbsp) Thai Dragon Sriracha sauce
  • 15ml (1 tbsp) soy sauce
  • 3 cloves garlic, minced
  • 15g (1 tbsp) sesame seeds
  • 3 spring onions, finely sliced (for garnish)

Instructions:

  • Preheat the oven to 200°C (180°C fan / 400°F).
  • Prepare Brussels sprouts: Trim the ends and halve them. Place in a large bowl.
  • Season: Add olive oil, salt, and black pepper. Toss until evenly coated.
  • Roast: Spread sprouts on a baking tray in a single layer. Roast for 20–25 minutes, turning halfway, until golden brown and slightly crispy.
  • Make the sauce: While sprouts roast, combine honey, Thai Dragon Sriracha sauce, soy sauce, and minced garlic in a small saucepan. Heat gently over low-medium heat until warmed and slightly thickened (about 3–4 minutes).
  • Coat sprouts: Transfer roasted sprouts back to the bowl. Pour over the honey-sriracha sauce and toss until evenly coated.
  • Serve: Transfer to a serving dish. Sprinkle with sesame seeds and sliced spring onions. Serve immediately.

Top tip: Adjust the Thai Dragon Sriracha amount depending on your heat preference – go bold or keep it mild!
