JULIENNE BRUNO – dairy-free cheeses inspired by the classics

JULIENNE BRUNO, the creative food developer and producer taking plant-based food to new heights, presents ‘Collection 01’, a dairy-free experience consisting of three products: Burrella, Crematta and Superstraccia.

Founded in 2020 by Axel Katalan, a food lover passionate about recreating the boundless eating experiences one usually has with dairy and meat options, JULIENNE BRUNO’s aim is not to imitate or compare. Instead, the brand offers a different perspective on plant-based food, creating familiar but new products for people to enjoy due to the quality, not because the products are vegan. 

Collection 01’ introduces three dairy-free cheeses: the delicate Burrella, the light and fluffy Crematta and the versatile and creamy Superstraccia. Created in fresh batches each week in-house, the cheeses are made using organic soya (the protein) and coconut oil (the fat) and are naturally fermented through a bespoke system, which has been perfected over the past two years. The sourcing, processing, packing and shipping of all of the products takes place under one roof – aptly named ‘Kitchen 01’. Inspired by classics, each product has been given a name that’s easily recognisable but also allows it to establish its own identity, thus making the vegan prefix obsolete.  

Bursting with beautifully simple flavours, all JULIENNE BRUNO products have been developed using complex and innovative techniques by a team of international chefs including Head of Product Development Albert Adrià (formerly Head Pastry Chef at El Bulli, Founder of Tickets, Enigma, Hoja Santa and various other Michelin Star restaurants), Head of Food Chi San (formerly  Head Chef at Wagamama and Food Services & BoH Operations at Park Chinois and Hakkasan  Group) and Board Advisor Alan Yau MBE (renowned for founding numerous ventures in gastronomy such as Hakkasan, Wagamama, Busaba Eathai and Park Chinois). 

Axel Katalan, Founder of JULIENNE BRUNO, states, “Being so in love with the world of food and having transitioned into veganism myself, I wanted to create something that truly excites in every sense. At JULIENNE BRUNO, our products are inspired by the food we have grown to love, whilst introducing new flavours and textures – ones which aren’t simply ‘good for vegan products, but simply good in general.” 

JULIENNE BRUNO products are available online at juliennebruno.com, in-store in the Foodhall at Selfridges London and on the menu at select restaurants in London such as the Big Mamma Group.
