Many people are stumped when it comes to buying gifts on Mother’s Day, with around 135,000 searches for ‘Mother’s Day gifts’ this month.
However, it turns out all mums want is some quality time. A previous study found that over half of mums said they really want to spend time with children and family on Mother’s Day, and what better way to say ‘I love you’ than a home-cooked breakfast in bed?
The experts at Wren Kitchens have shared their top fresh and seasonal breakfast recipes, which are certain to warm any mum’s heart and impress her this Mothering Sunday, including the trending hot cross alternatives.
Hot cross bun French toast
Ingredients:
- 4 hot cross buns
- 3 large eggs
- 120ml milk – can use alternatives
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- Knob of butter
Toppings of your choice – we suggest maple syrup, honey, Greek yogurt and berries to balance out the sweetness.
Method:
- Whisk the eggs together with the milk, vanilla extract, cinnamon, and nutmeg.
- Cut your hot cross buns in half and dip each half into the egg mixture, ensuring both sides are well coated in the wet mixture.
- Add a knob of butter to a non-stick pan and place each hot cross bun half into the pan.
- Cook for about 2 to 3 minutes each side or until they are slightly golden brown.
- Transfer to a plate and top with the toppings of your choice. Dust a slight coat of icing sugar to finish for an extra aesthetic Mother’s Day breakfast treat.
Feta eggs on toast
Ingredients:
- 2 large eggs
- 50g feta cheese
- 1 tablespoon olive oil
- Handful of fresh parsley, chopped
- Salt and pepper
- 2 slices of sourdough toast or crumpets
Method:
- Heat the oil in a nonstick pan and crack the eggs into the pan.
- Cook the eggs sunny side up, crumbling the feta on top when the eggs are almost done to allow the feta to melt slightly into the eggs.
- Toast your sourdough or crumpets.
- Place the eggs on top of the bread and sprinkle the parsley on top to garnish. You can add additional feta here and season with salt and pepper to taste.
Hot honey avocado and cottage cheese on toast
Ingredients:
- 2 tablespoons of cottage cheese
- ½ an avocado
- ¼ teaspoon of garlic powder
- 1 teaspoon of honey
- Pinch of chilli flakes
- Handful of chopped parsley
- 1 slice of sourdough
Method:
- Toast your sourdough under the grill or half and place in the toaster.
- Mash up the avocado in a bowl until smooth, adding in the garlic powder. Mix until combined.
- In a ramekin or separate bowl, mix together the honey and chilli flakes.
- Spread the avocado mixture on your sourdough, then place your cottage cheese on top.
- Drizzle over the hot honey and garnish with parsley.
