Rachel Khoo’s Frozen Honey Mangoritas

Ingredients
Frozen Lime Honey Cubes
- 150ml lime juice
- 100ml water
- 100g Rowse Manuka honey
For the Mangorita
- 150g frozen mango
- ½ of the frozen lime honey cubes
- 100ml blanco Tequila OR 100 ml fresh orange juice
For the Rim
- ½ tbsp lime juice
- 2 tbsp Rowse Manuka honey
- Flaky salt
Method:
1. Stir together lime juice, water, and honey, then pour into an ice cube tray and freeze for 5 hours.
2. When ready to make the drinks, blend half of the lime honey cubes, frozen mango, and tequila (if using) until smooth.
3. Mix 1 tbsp lime juice and 2 tbsp honey on a plate. Place flaky salt on another plate. Dip glass rims in the lime honey mixture, then in the salt.
4. Pour the frozen mangorita into the glasses and serve.
